From time to time i make new recipes when i cook, and here is the recipe for my Chili-dish :)

First of all the ingredients and how much of them (this is enough for 6-8 portions):

  • 500 g. Minced Meat
  • 200 g. Carrots
  • 2 Red Onions
  • 140 g. Water Chestnuts (1 tin)
  • 150 g. Snow Peas
  • 800 g. Chopped Tomatoes (2 tins)
  • 850 g. Baked Beans in Tomato Sauce (2 tins)
  • 1 tin Coconut Milk
  • 2-4 tsp. Chili powder
  • 1-2 tsp. Paprika powder (or 1-2 paprika)
  • 3 Tbs. Worcestershire sauce
  • 2 tsp. Red Curry Paste
  • 2-4 feds of Garlic

And then how to do it:

First of all i will recomend that you always find all ketleware and ingredients before you start cooking, this way you will know if you miss something.
Start be finding a large kettle, add the Chopped Tomatoes, Worcestershire sauce and the Chili powder. slice the water chestnuts in 4-5 clices each and add them. (You can start the heat on the kettle now so you don`t have to wait for it later on)
Cut the carrots into littlefinger-long and 2mm thick sticks, cut the Snow Peas in halves and add all this into the kettle.

Chop the Red Onions into cubes and cook them soft in a frying pan – add into the kettle.
Fry the Minced Meat in a frying pan together with the Paprika Powder and Garlic – add into the kettle.

Add the Red Curry Paste and some of the Coconut Milk in a microwave safe bowl and heat on max power for 20 sec, then stir the paste until it is mixed with the Coconut Milk. Add this and the rest of the Coconut Milk into the kettle.

Cook for 1 hour, stir from time to time.
Add the Baked Beans in Tomato Sauce and cook for another 10 minutes.

You are done!

Serve with cooked or fried rice, noodles or potatoes. Some salad and some garlic or herb bread. :)
NB! This tastes better when reheated the next day. It is also suitable for freezing, part up portions that you freeze in seal-able bags for easy reheating in boiling water.
